• SECRETO:
Located between the shoulder and the belly; it is extremely juicy and flavorful thanks to its high fat infiltration.
• PRESA:
A cut from the shoulder/neck area, very juicy and with the highest degree of marbling in the Iberian pork.
• PLUMA:
The end part of the loin, with an infiltration that intensifies the flavor in every bite.
• ABANICO:
A cut from the outer part of the ribs with excellent marbling; very flavorful and perfect for roasting.
• SOLOMILLO (Tenderloin):
A piece of extreme tenderness and juiciness, perfect for precision cooking on the grill or griddle.
• LOMO (Loin):
The classic cut; tender, aromatic, and with the firm texture characteristic of the Iberian pig.
